2026 Thanksgiving Menu: Slow-Smoked Turkey Breast and Sides for Pickup

Every Thanksgiving, somebody in the family gets up before sunrise to babysit a turkey. The oven is spoken for until dinner, the sides are fighting for burner space, and the person who did all the work is too tired to enjoy the meal.
This year, let us take the centerpiece off your list.
We are the Beasley family, and Haywood Smokehouse is our family's smokehouse, with three locations in Waynesville, Dillsboro, and Franklin. In 2023, Yelp named Haywood Smokehouse the No. 1 brisket spot in the United States and Canada. Our turkey breast is on the pit every day at all three locations, wet brined for at least 24 hours, seasoned with our pork rub, and slow-smoked over hickory. Our Thanksgiving Holiday Menu is open now, with one pickup day: Wednesday, November 25.
What's on the Thanksgiving menu at Waynesville and Dillsboro?
Waynesville and Dillsboro are offering our full catering menu for Thanksgiving, so you can build the whole table in one order: meats, sides, sauces, desserts, beverages, and the eating and serving utensils to go with it.
New for the holidays is our Spiral Cut Ham, Slow-Smoked and Glazed. It is a whole spiral cut ham, slow-smoked with a brown sugar and honey glaze, 10 lb average, for $69.99.
From the pit, you can order:
- Whole slow-smoked turkey breast, about 4 lb, feeds 8 to 12. Choose whole or sliced. Read more about how we brine, rub, and slow-smoke our turkey breast.
- Whole brisket, sliced or unsliced.
- Whole Boston butt, also called a pork shoulder, chopped or unchopped.

- Slow-smoked meats by the pound.

What comes in the Franklin Thanksgiving Family Meal?
Franklin is offering a Thanksgiving Family Meal for $159.00. It feeds about 6 and includes:
- A whole slow-smoked turkey breast
- Your choice of 4 quart sides: Coleslaw, Potato Salad, Collard Greens, Green Beans, Baked Beans, or Mac and Cheese
- Your choice of dessert: Half Pan Banana Pudding, Half Pan Cobbler, Whole Pecan Pie, or Whole Bourbon Chocolate Pie
- A 12 pack of rolls
- Reheating instructions
No substitutions on the Family Meal. Franklin orders must be paid before pickup, and Franklin can email you an invoice. Franklin's full menu of bulk meats, sides, and desserts is also available.
When do I order and pick up my Thanksgiving order?
Pickup is Wednesday, November 25, the day before Thanksgiving, at all three locations.
Waynesville and Dillsboro
Order by Thursday, November 19.
Pick up Wednesday, November 25, between 11am and 3pm.
Franklin
Order by Monday, November 23. No exceptions.
Pick up Wednesday, November 25, between 11am and 2pm.
All three locations close at 4pm on Wednesday, November 25, and we are closed on Thanksgiving Day.
Can I pick up my order hot or cold?
Your choice, at every location. Orders are packed cold unless you ask for hot, and there is no extra charge for hot.

How do I reheat my Thanksgiving order?
Everything reheats in a 300 degree oven. Here is how our family does it:
- Whole turkey breast, unsliced: Add the brine to the pan and bake covered for 1 hour 15 minutes. Rest 15 minutes before slicing.
- Whole turkey breast, sliced: Add the brine to the pan and bake covered for 30 minutes.
- Whole spiral cut ham: Bake 15 minutes per pound, about 2 1/2 hours.
- Whole brisket: Bake covered in the film wrap for 2 hours. Rest 30 minutes before slicing.
- Whole Boston butt: Bake in the film wrap for 2 hours 30 minutes. Rest 15 minutes before chopping.
- Whole slab of ribs: Bake covered in the film wrap for 30 minutes. Rest 10 minutes before slicing.
- Meats by the pound and sides: The reheating time is written on top of the pan.
Whatever you are reheating, heat it until it reaches 165 degrees inside. Franklin's Family Meal comes with its own reheating instructions.
